For the Sauce
- 1-inch piece ginger, peeled and finely minced.
- 2 cloves garlic, finely minced
- 1 ½ cups chicken stock
- ¼ cup hoisin sauce
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- ¼ cup Halifax Stingin' Hotter Honey Red Lava Edition
For the Chicken
- 1 lb boneless, skinless chicken breast, cubed
- 1 egg white
- 1 cup all-purpose flour
- ½ cup cornstarch
- oil, for frying
- salt, to taste
For Garnish
- Green onions, sliced
- cooked rice or noodles, for serving

- In a medium saucepan over medium heat, sauté the ginger and garlic until fragrant, about 1 minute.
- Add the chicken stock, hoisin sauce, rice vinegar, sesame oil, and Halifax Hotter Honey Red Lava Edition. Stir well to combine.
- Bring the sauce to a gentle simmer and cook for 10-12 minutes, allowing it to reduce slightly. Season with a pinch of salt and set aside.
- In a large bowl, whisk the egg white until slightly frothy. Add the cubed chicken, flour, and cornstarch. Toss until the chicken is evenly coated.
- Heat oil in a large pot or Dutch oven to 350°F (175°C).
- Work in batches, carefully fry the chicken pieces for 5-6 minutes or until golden brown and cooked through.
- Transfer the cooked chicken to a paper towel-lined tray and season lightly with salt.
- Add the crispy chicken to the prepared sauce and toss until every piece is fully coated.
- Garnish with sliced green onions and serve immediately over steamed rice or noodles.
