    • 250–300g halloumi
    • 2 eggs, beaten
    • 1 cup all-purpose flour
    • 2 cups cornflakes, crushed
    • Oil, for frying
    • Halifax Honey Company Stingin’ Hot Honey, for drizzling

    Method

    1. Poach the halloumi:

    Bring a pot of water to a gentle simmer over medium-low heat. Carefully place the halloumi in the water and poach for 2–3 minutes.

    2. Flatten the halloumi:

    Carefully remove the halloumi and transfer it to a clean tea towel. Gently flatten the halloumi using a rolling pin, being careful not to break it apart.

    3. Coat the halloumi:

    Set up three bowls with the flour, beaten eggs, and crushed cornflakes. Carefully coat the halloumi in flour, then dip it into the beaten egg, and finally coat thoroughly with the crushed cornflakes.

    4. Fry until crispy:

    Heat the oil and carefully add the coated halloumi. Fry for 2–3 minutes, or until golden brown and crispy. Do not flip. Instead, carefully spoon hot oil over any cornflakes on the top that aren't submerged in the oil.

    5. Drain:

    Carefully remove the schnitzel from the oil and place it on a paper towel-lined plate or tray to drain.

    6. Add the hot honey:

    While the halloumi is hot and crispy, generously drizzle with Halifax Stingin’ Hot Honey.

    7. Serve:

    Serve immediately with pickled vegetables, sauerkraut, or coleslaw.
