Hot Honey Pinwheels

    Ingredients
    • 1 bulb of garlic
    • Olive oil
    • 1 sheet of pre-made puff pastry
    • 2 cups of mozzarella, shredded
    • ¼ cup of chives, chopped
    • ¼ cup Stingin’ Hot Honey
    • ¼ cup pecorino, grated

    Method
    1. Preheat your oven to 400°F (200°C).
    2. Slice the top off the garlic bulb to expose the cloves. Drizzle with a little olive oil and wrap tightly in aluminum foil.
    3. Roast the garlic for approximately 1 hour, or until the cloves are soft and golden.
    4. Remove the garlic from the oven and allow it to cool slightly.
    5. Roll out the puff pastry onto a lightly floured surface.
    6. Squeeze the roasted garlic cloves from the bulb and spread them evenly across the surface of the puff pastry.
    7. Sprinkle the mozzarella cheese and chopped chives evenly over the garlic.
    8. Drizzle the Halifax Stingin' Hot Honey over the cheese mixture.
    9. Starting from one long edge, tightly roll the puff pastry into a log.
    10. Slice the log into 8–10 equal pinwheels.
    11. Arrange the pinwheels on a parchment-lined baking sheet, leaving space between each one.
    12. Bake for 15–20 minutes, or until the pastry is puffed and golden brown.
    13. Transfer to a serving platter and sprinkle with grated pecorino cheese.
    14. Finish with an extra drizzle of Halifax Stingin' Hot Honey and serve warm.
