    Ingredients
    • 6 boneless skinless chicken thighs
    • 1 tbsp salt
    • 1 tsp pepper
    • 1 tbsp smoked paprika
    • 1 tbsp onion powder
    • 1 tsp cumin
    • 1tsp chili powder
    • ¼ cup olive oil
    • 1 tomato, diced
    • 2 cups of chicken stock
    • 2 cloves of garlic, minced
    • ¼ cup Halifax Stingin’ Hot Honey
    • Juice and zest from half a lime

    Optional Toppings

    • Avocado
    • Radishes, thinly sliced
    • Pickled red onions
    • Fresh cilantro

    Method
    1. In a large bowl, combine the chicken thighs, salt, pepper, smoked paprika, onion powder, cumin, chili powder, and olive oil. Mix thoroughly to coat the chicken evenly.
    2. Heat a large skillet or sauté pan over medium-high heat.
    3. Add the chicken thighs and sear for 3–4 minutes until lightly browned.
    4. Flip the chicken and add the tomatoes and garlic. Stir gently to combine.
    5. Pour in the chicken stock and bring to a gentle simmer.
    6. Reduce the heat to medium-low and cook for approximately 20 minutes, or until the chicken is fully cooked and tender. Add additional stock if needed during cooking.
    7. Stir in the Stingin' Hot Honey and remove the pan from the heat.
    8. Using two forks, shred the chicken directly in the pan and mix it into the cooking liquid.
    9. Finish with fresh lime zest and lime juice, stirring to combine.
    10. Serve in warm tortillas or on crispy tostadas with your favourite toppings.
