- ½ lb sliced pork belly
- ¼ cup light soy sauce
- ¼ cup Halifax Stingin' Hot Honey
- ¼ cup hoisin sauce
- 1 tbsp sesame oil
For Serving
- 2 cups cooked jasmine rice
- 1 avocado, sliced
- ½ cup pickled vegetables (carrots, radish, cucumber, etc.)
- 1 cup cucumber, sliced
- 2 fried eggs
- ½ cup shelled edamame
- ¼ cup green onions, sliced
- ¼ cup fresh cilantro, chopped

- In a medium bowl, whisk together the soy sauce, Halifax Stingin' Hot Honey, hoisin sauce, and sesame oil. Set aside.
- Heat a large cast iron skillet over medium heat.
- Add the pork belly strips and cook for 2-3 minutes per side, allowing the fat to render and the pork to lightly caramelize.
- Carefully drain excess fat from the skillet.
- Reduce the heat to medium-low and pour the glaze into the skillet.
- Continue cooking and turning the pork belly strips as the glaze reduces and thickens, ensuring each piece is evenly coated.
- Cook until the pork belly is sticky, glossy, and caramelized.
- For extra caramelization, transfer the pork belly to a baking sheet and broil on the top rack of your oven for 1-2 minutes.
- Divide cooked rice between bowls and top with glazed pork belly.
- Finish with your favourite toppings such as avocado, pickled vegetables, cucumber, edamame, cilantro, green onions, or a fried egg.
