- 2 tsp dry active yeast
- 1 ¾ cup lukewarm water
- 2 tsp sugar
- 4 cups flour
- 3 tsp Salt
- 1 sprig rosemary
- 2 tbsp extra virgin olive oil
- 2 tbsp Halifax Stingin’ Hot Seasoning
- 2 tsp flakey salt

- In a small bowl, combine the lukewarm water, sugar, and active dry yeast. Allow the mixture to sit for up to 5 minutes, until foamy and activated.
- In a large mixing bowl, whisk together the flour and salt.
- Pour the activated yeast mixture into the flour and mix until a shaggy dough forms.
- Knead the dough until smooth and well incorporated.
- Cover the bowl and place it in a warm location. Allow the dough to rise for 2–4 hours, or until doubled in size.
- Uncover the dough and gently pull and fold it over itself several times to build structure.
- Cover again and let rest for an additional 30 minutes.
- Generously oil a baking pan and transfer the dough into the pan.
- Using your fingertips or the backs of two spoons, gently stretch the dough until it fills most of the pan.
- Drizzle the olive oil evenly over the dough and spread it across the surface.
- Sprinkle the Stingin' Hot Seasoning evenly over the top. Add the rosemary leaves and finish with flaky salt.
- Bake at 425°F (220°C) for 12–15 minutes, or until the focaccia is golden brown and crisp on top.
- For extra sweet heat, drizzle Stingin' Hot Honey over the focaccia during the final 5 minutes of baking.
- Allow to cool slightly before slicing and serving.
